3 Ingredient Banana Pancakes
Ingredients
3 ripe bananas
2 1/4 cups soy milk (or other plant milk)
1 cup rolled oats
Spices, optional (cinnamon, cardamom, or ginger powder work well)
Toppings (e.g., blueberries, mixed berries, lemon juice, soy yoghurt, added sugar free jam, fruit compote)
Method
- Add all ingredients to a blender and blend until smooth. 
- Heat a non-stick fry pan on medium heat. 
- Use 1/4 cup measure to pour pancake batter on the fry pan to ensure equal pancake size and cooking times. 
- When pancakes start to bubble, flip and cook until golden in colour. 
- Serve with toppings of choice.
